Oatmeal Crasin Cookies
We offer these cookies for guests to enjoy anytime and we have to make them every day. This is a toothsome, chewy cookie that will stay with you all day or night.
1 Cup butter (two sticks) softened
1/2 Cup granulated sugar
1 Cup brown sugar (dark or golden)
2 large eggs
1 tsp Vanilla
1-1/2 Cups unbleached flour
1 tsp Baking soda
1/2 tsp table salt
1 tsp Vietnamese Cinnamon
3 Cups Old-fashioned rolled oats
1 cup Craisins (dried Cranberries)
Preheat oven to 375 degrees F
Cream together the butter and sugars
Blend in the eggs and vanilla.
Then mix in the flour, soda, salt and Cinnamon. Mix only until the ingredients just come together.
Stir in the oats and craisins.
Spoon large teaspoonsful onto baking sheets on 3" centers.
Bake for 12 minutes until just starting to brown. Alternatively, convection bake at 335 for 12 minutes.
